Between Five Bells is a collaborative project between iconic winemaker Ray Nadeson, wine merchant David Fesq and top Sydney sommelier Josh Dunne. Their top priority is been drinkability, with Californian field blends and Southern Rhône wines as particular inspirations. Between Five Bells is very much an artisanal producer, and quantities are minuscule. After picking, the Shiraz was divided into two parcels. The first (60%) is whole bunch fermented then gently pressed straight into barrel. The second (30%) is destemmed and undergoes a slow, natural ferment in 3000 litre barrel with a once a day manual punching down. This eminently drinkable wine is a riot of crushed fruit, earthy spice and bitter chocolate, with an underlying savoury edge.
Grapes: 90% Shiraz, 5% Pinot Noir, 3% Nero d’Avola, 2% Negroamaro
