Little Pomona Cryo-Conditioned Sparkling Cider 7.7% (750ml)
Little Pomona cidermakers James and Susanna Forbes love to experiment, and this is a great example - a super limited (only 84 bottles) experimental offering, fermented in former Moscatel barrels with wild yeasts, blended with an ice cider.
For the ice cider component, the juice from Foxwhelp, Blenheim Orange and Ribston Pippin apples was frozen and pressed to extract super sweet concentrated juice which was then fermented with wild yeasts. This was then mixed with the barrel cider (56% Michelin, 25% Dabinett, 19% Médaille d’Or) and continued fermenting in bottle.
The resulting cider is naturally sparkling and bone dry with generous tannins. It has an intriguing wild herbal dimension from the ice cider component.
