Starvecrow Black Label Cyder (375ml)
Working with non-traditional cider apples, so low tannin and acid orientated, wine and cider maker Ben Walgate takes a very natural wine-like approach to cider making. His Black Label cyder is barrel aged in old whisky casks for eight months before being put in bottle, with a small addition of sugar to develop a delicate natural sparkle. This is a wild one, with a bit of funk on the nose and slightly citrusy on the palate, getting the most from the more delicate apple varieties it uses.
