Tillingham Qvevri Rullem 11% 2018 (750ml)
For this wine, a 400 litre Georgian Qvevri was filled with destemmed, crushed grapes and left to ferment for 21 days on skins, with daily hand maceration. The Qvevri was then emptied, the grape skins pressed and the wine returned to Qvevri. Aged under flor for 5 months before bottling by gravity. Wild ferment, no filtration and no added sulphur.
